Passion Fruit Gelatin with Coconut

  • 1 cup passion fruit juice
  • 1/2 cup sugar
  • 2 teaspoons gelatin powder
  • 1/4 cup cold water (for blooming gelatin)
  • 1 cup coconut milk
  • Fresh mint leaves for garnish
  • Passion fruit seeds for decoration


  1. Bloom the gelatin in 1/4 cup of cold water. Set aside.
  2. Heat passion fruit juice and sugar in a saucepan until the sugar dissolves. Remove from heat.
  3. Add the bloomed gelatin to the warm juice mixture and stir until the gelatin dissolves completely.
  4. Pour the mixture into glass cups, filling them about two-thirds full. Refrigerate until set, about 2-3 hours.
  5. Once the passion fruit gelatin is set, gently pour the coconut milk over the top to create a second layer.
  6. Chill again until the coconut milk layer is set.
  7. Garnish with passion fruit seeds and fresh mint leaves before serving.
