Lychee Rose Gelatin Dessert

  • 1 cup lychee juice (from canned lychees)
  • 1/2 cup water
  • 1/4 cup sugar
  • 2 teaspoons gelatin powder
  • 1/4 cup cold water (for blooming gelatin)
  • 1/2 cup chopped lychee fruit (from canned lychees)
  • 1 tablespoon rose water
  • Edible rose petals for garnish
  • Fresh mint leaves for garnish


  1. Bloom the gelatin in 1/4 cup of cold water. Set aside.
  2. Heat lychee juice, water, and sugar in a saucepan until the sugar dissolves. Remove from heat.
  3. Add the bloomed gelatin to the warm mixture and stir until the gelatin dissolves completely.
  4. Stir in the rose water and chopped lychee fruit.
  5. Pour the mixture into delicate glass cups. Refrigerate until set, about 2-3 hours.
  6. Garnish with edible rose petals and fresh mint leaves before serving.
