Douhua - oolong Tea jelly

Douhua with Oolong Tea Jelly – Taiwan

Taiwanese sweet Toufa (Douhua or tofu pudding) is a healthy national sweet enjoyed throughout the year and has recently been attracting attention in Japan as well, with the gentle flavour of soy milk and smooth texture making it addictive. You can enjoy changing the flavour by using various toppings and syrups.

Ingredients for 4 people:

Bean flower

  • 6g gelatin (leaf)
  • 300ml unadjusted soy milk
  • 15 g sugar beet
  • 20g honey

Oolong Tea Jelly

  • 8g gelatin 
  • 25g granulated sugar
  • 300ml Oolong Tea

Jasmine Tea Syrup

  • 80g granulated sugar
  • 300ml Jasmine Tea

Topping

  • as you like – colourful tapioca
  • as you like – white jellyfish
  • as you like – Wolfberry

Preparation:

Make bean flowers

  1. Put soy milk, sugar beet sugar, and honey in a pot and heat over medium heat, stirring with a spatula until the temperature reaches about 60℃, being careful not to let it boil.
  2. Remove the pot from the heat, sprinkle in the new silver and let it melt.

  2. Once it has cooled down, cool it in the refrigerator.

[Finish]

  1. Place the oolong tea jelly in the bottom layer of the glass and the bean flowers in the top layer.
  2. Add toppings of your choice and drizzle with jasmine tea syrup.
