Dragon Fruit and Kiwi Gelatin

Ingredients

  • 1 cup red dragon fruit puree
  • 1 cup kiwi puree
  • 1/2 cup sugar (divided)
  • 4 teaspoons gelatin powder (divided)
  • 1/2 cup cold water (for blooming gelatin, divided)
  • Slices of dragon fruit and kiwi for garnish

Fruits like watermelon and papaya can be great alternatives to dragon fruit.

Preparation:

  1. Dragon Fruit Layer:
    • Bloom 2 teaspoons of gelatin in 1/4 cup of cold water. Set aside.
    • Heat the dragon fruit puree and 1/4 cup of sugar in a saucepan until the sugar dissolves. Remove from heat.
    • Add the bloomed gelatin to the warm dragon fruit mixture and stir until the gelatin dissolves completely.
    • Pour the dragon fruit mixture into clear glass cups, filling them halfway. Refrigerate until set, about 1-2 hours.
  2. Kiwi Layer:
    • Bloom 2 teaspoons of gelatin in 1/4 cup of cold water. Set aside.
    • Heat the kiwi puree and 1/4 cup of sugar in a saucepan until the sugar dissolves. Remove from heat.
    • Add the bloomed gelatin to the warm kiwi mixture and stir until the gelatin dissolves completely.
    • Pour the kiwi mixture over the set dragon fruit layer. Refrigerate until fully set, about 2-3 hours.
  3. Garnish:
    • Once the gelatin is fully set, garnish with slices of dragon fruit and kiwi on the rim of the glass before serving.
