Coconut Milk Thach (Vietnamese Coconut Milk Jelly)

  • 1 cup coconut milk
  • 1 cup water
  • 1/2 cup sugar
  • 2 teaspoons gelatin powder
  • Fresh mint leaves for garnish


  1. Bloom the gelatin in 1/4 cup of cold water. Set aside.
  2. In a saucepan, combine coconut milk, water, sugar, and gelatin powder. Stir well to combine.
  3. Bring the mixture to a boil over medium heat, stirring constantly to prevent lumps.
  4. Once it boils, reduce the heat and simmer for a few more minutes until the gelatin is fully dissolved.
  5. Pour the mixture into a mould or a shallow dish. Let it cool to room temperature, then refrigerate until set, about 2-3 hours.
  6. Once set, cut the jelly into bite-sized cubes.
  7. Arrange the cubes neatly on a plate and garnish with fresh mint leaves.
